In this article I am going to share an easy to follow but incredibly tasty Mushroom Soup made in a soup maker. The soup is thick yet smooth, perfect for those cold months and ready in just 30 minutes.

Mushroom has got to be one of my go to soup recipes, it is perfect for the cold nights and is amazing with some nice crusty bread. If you are looking to make a tasty mushroom soup in a soup maker, this one is perfect. It’s incredibly easy, only uses a few ingredients and is thick and creamy. The great thing about making this mushroom soup in a soup maker is just how easy it is, it only takes 30 minutes if you are looking for it to be nice and smooth. 

First of all you want to add the olive oil and then put in the white onion, garlic and the leek. If your soup maker has a chop function then use this, you will need to manually cut these finely if yours does not have this option. 

You then want to saute these off using the saute function. This will usually take around 6 minutes and is incredibly important. It helps to soften the onions but also gives your mushroom soup a whole new depth of flavour. 

Once it has finished with the saute, you want to add the mushrooms along with the stock. I usually go for vegetable stock but chicken can add a really nice flavour as well. I prefer smooth soup so when making this mushroom soup in the soup maker, I will click the “smooth” function which will normally take 30 minutes. 

After the mushroom soup has finished cooking and blending in the soup maker, you want to stir in the cream. Finally add some salt and pepper, taste it as you are adding so you make sure you add the right amount for your own personal taste.

Ingredients

Scale
  • 1 tbsp Olive Oil
  • 1 Brown Onion (chopped)
  • 1 Leek (Sliced)
  • 1 Garlic Clove (chopped)
  • 500g Chestnut Mushrooms (sliced)
  • 500ml Chicken or Vegetable Stock
  • 4 tbsp Cream

Instructions

  • Add the olive oil, onion, leep and garlic to your soup maker
  • Press the Chop option to finely chop. (if you do not have this option then finely chop before adding) 
  • Select the saute option 
  • Once sauteed add the mushrooms, stock and select the smooth soup option
  • When ready stir in the cream and then serve
